Mayport Galvanized Kingfish Recipe
2 pounds of King Mackerel (aka kingfish) fillets or steaks
4 Tbsp lime juice
4 Tbsp low sodium soy sauce
2 Tbsp olive oil
1/2 tsp oregano
1 Tbsp fresh parsley, finely chopped
1 Tbsp fresh basil, finely chopped
2 cloves garlic, crushed
1/4 tsp ground black pepper
Create a marinade by combining all ingredients, except the fish, in a 9" x 13" glass pan. Add in the fish to the pan and marinate for 15 minutes on each side.
Prepare the BBQ for direct grilling. Cook the fish for 4 or 5 minutes on the first side. Turn the fish over, and baste with the marinade, and cook for another 4 – 5 minutes or until the flesh is flaky.
