Spicy Baked Shrimp
4 large servings
Ingredients
1 pound medium or large size shelled, deveined shrimp
(leave the tails on)
1/2 c. olive oil
2 Tbsp cajun or creole seasoning
2 Tbsp fresh lemon juice
2 Tbsp chopped parsley
1 Tbsp honey
1 Tbsp soy sauce
pinch of cayenne pepper
Combine all ingredients except the shrimp in a 9" x 13" glass baking pan. Add the shrimp and toss to coat them evenly.
Refrigerate for 1 hour.
Preheat oven to 450°.
Bake for 10 minutes – stirring occasionally.
Remove and serve with lots of thick crusty bread to sop up the juice.
