Shrimp in Foil
4 large servings
2 pounds of medium or large cleaned shrimp
1/2 pound blue cheese – crumbled
1/2 pound cream cheese – softened
1 tsp fresh chives
1 tsp fresh parsley
1 clove chopped garlic
3/4 c dry white wine
4 slices of fresh lemon
Blend the blue cheese, cream cheese, chives, parsley, and garlic.
Thin this mixture with the white wine.
Tear off 4 large sheets of tin foil.
Place 1/2 pound of shrimp and 1/4 of the cheese and herb mixture into each sheet of foil.
Fold over the foil and seal all the edges leaving some air in the packet.
Bake at 400°. For 20 minutes or put on the BBQ grill on indirect heat, for about the same amount of time.
