Grilled Shrimp
4 large servings
ingredients
1 1/2 pounds of medium shrimp – cleaned
2/3 c. salad oil
1 Tbsp minced onion
1 clove minced garlic
2 tsp sugar
1/2 tsp dried tarragon
1/2 tsp salt
1/4 tsp pepper
1/4 tsp paprika
grated zest of 1/2 lemon
Combine everything and marinate for at least 4 hours in the refrigerate.
Reserve the marinade when you're ready to cook.
Thread the shrimp on skewers – those flat ones work really well.
Grill the shrimp on the BBQ 4" above the coals for a total of 5-8 minutes.
Brush with the marinade during the grilling.
Discard any unused marinade.
