Sauteed Scallops

serves 4

Ingredients

2 pounds fresh scallops
4 Tbsp unsalted butter
2 Tbsp finely minced onion
1 ~ 2 cloves minced garlic
freshly ground pepper
1/2 c. chopped fresh parsley
pinch of hot red pepper flakes
1 ~ 2 Tbsp fresh lemon juice

Melt the butter in a large saute pan over medium high heat. Add the onion, garlic and pepper. Stir and cook for about 1 minutes or until the onions are soft.

Add the scallops and saute for another 4 – 6 minutes. The scallops should be opaque.

Removed the scallops to a warmed platter. Add the parsley, red pepper flakes and lemon juice back to the pan and heat through.

Pour the sauce over the scallops and serve immediately.
