Grilled Red Snapper Fillets

serves 4

Ingredients

red snapper

4 red snapper fillets ~ about 4-5 ounces each
4-6 Tbsp unsalted butter
5 cloves of garlic, finely chopped
3 limes
1 tsp Janes Crazy Mixed Up Salt

In a smallsaute pan, melt the butter. Add in garlic andsauteit for about 3 minutes, or until soft. Juice two of the limes and add that juice into the garlic-butter mixture. Remove from heat.

Baste each fillet, on both sides, with the butter mixture. Sprinkle each fillet with Janes Salt.

Cover the grate of the BBQ grill with foil. Place the fish on the foil and cook over indirect heat for 4 or 5 minutes on one side and then flip them over and cook for at least that long on the second side. Keep basting the fish with the butter mixture while cooking. The fish should be opaque and flake easily when it's done.

To serve, slice the remaining lime into thin slices and use these as a garnish on the fish.

This recipe will work equally well with sea bass, pompano and catfish. Adjust grilling times appropriately.
