Grilled Grouper with Avocado Lime Sauce

Serves 4

Ingredients

grouper

4 grouper fillets, about 8 ounces each
1- 2 Tbsp olive oil
2 tsp sea salt
1 tsp white pepper

Sauce Ingredients:

1 ripe avocado, skin removed and pitted
1/2 medium sweet onion, chopped
Juice from 2 fresh limes
1/2 tsp sea salt
1/2 tsp white pepper
1/2 tsp red pepper flakes

To make the sauce, place all sauce ingredients in a food processor or blender and puree until smooth. Thin with additional lime juice if needed. Taste for seasoning.

Brush the grouper with olive oil and season with sea salt and white pepper. Grill the fish over direct coals on a BBQ or in the broiler until it flakes easily. Rub some vegetable oil on the grill grates first if using a BBQ. The grouper should take about 4 – 5 minutes per side. To serve, pour some of the sauce over each fillet, and put any extra in a bowl on the table.

This recipe will work equally well with sea bass, red snapper, pompano and catfish. Adjust cooking times appropriately.
